Our butter is a thing of beauty. It seems unfair that we call it "Ugly Butter".
Ugly Butter starts as sweet cream from PNW Jersey cows. The cream is cultured, and then churned in small batches to the beautiful golden butter. As the butter develops it is cold washed and pressed by hand to form our beautiful, ugly butter. We will cut a slab off and package if for market or sell the whole blocks to our talented chefs.
We make caramel sauces including Cajeta, a traditional Mexican caramel sauce made with goat milk, and Dulce de Leche, made with the rich Jersey cow milk. There is nothing better for your sweet tooth (or your coffee!).
Unless, you're lucky enough to catch our occasional offerings of our famous Laughing Bellies Toffee.
The same fresh, PNW local Jersey cows that produce cream for our butter provide rich, non-homogenized whole milk for our cheesemaking. We are lucky to be able to work with such fine milk to produce our exceptional, specialty cheeses.
Our goat milk comes from our herd of Nubian dairy goats, we milk twice a day, every day. This means we have control of the process from selecting the local hay or certified organic grain, to the handling and chilling of the milk. All of that control equals an exceptional product you'll have to taste to understand. We make fresh and aged goat cheese, something for every palate, whether you prefer mild or pungent flavors, we've got you covered..
